Seasonal Breakfast Loaf

2 eggs

3 giant peaches

3 Thai bananas

1 cu flour

2 tsp baking powder

1/4 cu whipping cream

1/4 cu icing sugar

1/4 cu maple syrup

1/2 cup cinnamon sugar

1 tsp vanilla


Toss the fruit in maple syrup and half of the cinnamon sugar

Add in the eggs raw and mix all together

Add in the cream and vanilla, mix until smooth

Sift in the flour and baking powder

Mix it all up until combined

Pour into loaf pan and sprinkle the rest of the cinnamon sugar on top

Bake at 350F for an hour to hour and a half (If baked in a cake pan or muffin tin, bake for less time. Do the good ole' knife check!)
